We work in small batches because the two steps that matter — tempering the chocolate and resting the filling — cannot be hurried. Everything on this page is made to order and leaves the kitchen the day it is packed.
The ritual
Nothing here is a metaphor. This is the sequence a box passes through, and the reason a piece sometimes leaves the shop.
We buy couverture in small lots and taste every delivery before it enters the kitchen. Fruit is bought ripe and used the same week — which is why some boxes rotate out of the shop without notice.
Chocolate is tempered in small batches so the crystal structure sets tight. That is what gives a shell its snap and its shine, and it is the step that cannot be rushed or reheated twice.
Ganache and caramel are cooked to temperature, not to a timer, then rested overnight. Resting is invisible in the photograph and obvious in the texture.
Shells are closed, scraped, and unmoulded by hand. Pieces that sit unevenly or lose their shine are pulled here rather than packed and apologised for later.
Boxes are packed the day they ship, with an insulated liner in warm months. Nothing is packed in advance to sit on a shelf.
Orders leave with tracking and an estimated arrival window. If a delivery is delayed past that window, write to us and we remake the order.
How we work
We cap what we make in a day. It bounds how much we can sell, and it is the only way the tempering and the resting stay honest.
Cream, butter, sugar, fruit, couverture. If a piece needs a stabiliser to survive the trip, we redesign the piece instead of adding the stabiliser.
Every listing states the count, the size, and what rotates. Allergen information travels with the order and is printed on the box.
Orders and questions are answered by the same small team that makes the sweets, usually within one business day.
